HOW TO PREPARE OFE EWA (EWA SOUP)

Ewa soup, often called Ofe Ewa is made with ewa leaf. It is one of the top foods among the Nkanu people of Enugu State. Ofe Ewa is good and it is the soup i look forward to eating whenever I go to my grandmother’s house.

Today we will be showing you how to make ofe ewa like a pro.

Ingredients

  • Ewa leaf
  • Meat
  • Stockfish
  • Dry fish
  • Onion
  • A cup of glass
  • Okpei
  • Fresh pepper
  • Crayfish
  • Seaoning Cubes
  • Salt to taste

Steps For Preparing Ofe Ewa

First up, we chop up the vegetables and then wash thoroughly as the leaf is ver bitter then leave it by side.

Wash the meat and stock fish then place them in a pot and season with salt and seasoning cube. Boil until they are almost tender.

Place the dry fish in boiling hot water for 2 minutes, drain and rinse thoroughly in cold water. Add the dry fish to the pot of boiling meat.

Next up, pick the ewa leaves and wash thoroughly. Put in a pot and add enough water to cover it. You will need to stir and push the leaves into the pot of water because they will float to the top.

Boil till the leaves wilt and the bitterness is almost gone. This can take up to 15-20 minutes. Drain and rinse in cold water, squeeze out as much water as you can.

In a clean and dry pot, placed over medium heat, add palm oil, when heated a little, add onions and fry. Add egusi and stir well and fry till it is dry and sandy.

Add the stock, water, okpei, pepper, ground crayfish and seasoning cubes, salt and stir then bring to a boil. Taste.

Add meat, stockfish and dry fish, cover and cook for a few more minutes and take off the heat.
